Method

Make the dressing

  1. Combine lemon juice, fish sauce, tamari, Dijon, sriracha, and garlic.
  2. Whisk in the rice bran oil until emulsified.

Make the aioli

  1. Mix ⅓ cup of the dressing into 1 cup of mayonnaise. Set aside.

Cook the beans

  1. Heat a small amount of oil in a frying pan over medium-high heat.
  2. Add the green beans and shaved shallots.
  3. Add enough dressing to coat, then let steam for a minute or two.
  4. Toss in the cashews and season with salt.

Serve

  1. Transfer to a serving dish and drizzle generously with aioli.
  2. Serve hot.
The aioli makes about 1 cup — more than you need. It keeps well in the fridge for a week and works as a dip or sandwich spread.
