The Beans

Ingredients
For the green beans
- 1 lb fresh green beans, cleaned and blanched
- ½ cup roasted unsalted cashews, broken into pieces
- ½ cup shallots, shaved thin
For the dressing
- 2 tablespoons fresh lemon juice
- 2½ tablespoons fish sauce
- 1 tablespoon tamari soy
- 1½ teaspoons Dijon mustard
- 1½ teaspoons sriracha
- 1 clove garlic, roughly chopped
- 2 tablespoons rice bran oil
For the aioli
- ⅓ cup green bean dressing (from above)
- 1 cup mayonnaise
Method
Make the dressing
- Combine lemon juice, fish sauce, tamari, Dijon, sriracha, and garlic.
- Whisk in the rice bran oil until emulsified.
Make the aioli
- Mix ⅓ cup of the dressing into 1 cup of mayonnaise. Set aside.
Cook the beans
- Heat a small amount of oil in a frying pan over medium-high heat.
- Add the green beans and shaved shallots.
- Add enough dressing to coat, then let steam for a minute or two.
- Toss in the cashews and season with salt.
Serve
- Transfer to a serving dish and drizzle generously with aioli.
- Serve hot.
The aioli makes about 1 cup — more than you need. It keeps well in the fridge for a week and works as a dip or sandwich spread.
